Coffee and Walnut Fudge Recipe

Ingredients:

3 c of sugar (granulated)
1 c of one half-and-one half
3 tbsps of syrup (light corn)
1/4 tsp of extract (vanilla)
1/4 tsps of salt
1 tbsp of coffee (instant); powdered
2 tsps of water (hot)
1 c of walnuts; chopped coarsely
4 tbsps of butter

Instructions:

Combine the first four ingredients of the recipe in a glass/ceramic bowl (microwave safe) and cook at HIGH setting for 5-7 mins.

Let mixture boil fully while blending it from time to time. Put a thermometer (candy) in its place.

Continue cooking at the same setting for another 7-10 mins./until temp. is 240 degrees Fahrenheit, alternatively until your mixture becomes a soft-ball mixture.

Melt coffee with the 2 tsps. of warm water; blend the coffee mix, butter, & extract (vanilla) to mixture w/out stirring it. Let mixture cool (at 110 degrees F (when the outside part of the bowl is tepid).

For the meantime, coat a pan (square, and 8 inch in size) with butter evenly. When the candy mix cools, blend in all the ingredients using a spoon (wooden).

When it thickens and it loses its sheen, then discontinue beating. Pour the nuts and place in the pan, and refrigerate until firm, the cut the fudge in desired sizes.
