Diamond White Fudge Recipe
Ingredients:
2 c of sugar (granulated)
1/3 c of corn syrup(white)
2 tsps of vanilla(or rum or brandy) flavoring
1/4 tsp of salt
1/2 c of (dairy) sour cream
2 Tbsps of butter
1 c of Diamond walnuts; chopped coarsely
1/4 c of cherry candies ; quartered
Instructions:
Using a saucepan, mix the following ingredients: granulated sugar, sour cream, white corn syrup, butter and salt. Let the mixture boil while stirring it constantly ’til the sugar melts.
Boil on moderate heat, this time w/o stirring the mixture ’til it reaches soft-ball stage (236 degrees F w/ a thermometer (candy).
Take the saucepan out of the burner and then, let it stand for a quarter of an hour w/o whisking.
Add the desired flavoring to the fudge and whisk ’til it loses gloss (8 minutes, approximately). Blend the quartered cherries, plus the chopped walnuts.
Place the fudge in a pan lined w/ grease. Let it cool and then, slice into desired sizes. Yields 1.5 lbs.

Superior Fudge Recipe
Ingredients:
2 packs of choco chips (12 oz)
2 c of sugar (granulated)
12 big marshmallows; halved
1 c of milk (evaporated)
1/2 c of walnuts; chopped
1/4 c of butter chunks
1/2 tsp of vanilla flavoring or extract
1/4 tsp of peppermint flavoring or extract
A pinch of salt
Instructions:
Mix the walnuts, chocolate, butter, flavorings and salt inside a large bowl.
Separately, inside a medium-sized saucepan, mix the milk, marshmallows, and sugar. Let it boil first, then simmer for around 5 mins while stirring occasionally w/ a heat-resistant spoon.
Slowly pour it onto the bowl with chocolate then mix very well. Pour the resulting batter into an 8 inch square pan then allow to cool and set.
Makes 1.5 lbs.

Vanilla Peanut Butter Fudge Recipe
Ingredients:
1 & 2/3 c of sugar (granulated)
2/3 c of milk (evaporated)
2 c of mini mallows (fruit-flavored)
3/4 c of peanut butter (creamy)
12 ozs vanilla-flavored milk chips
A tsp of vanilla
Ingredients:
Using a saucepan (heavy, large), combine milk and sugar. Place over moderate heat ’til it boils. Stir constantly. Continue cooking for 5 more minutes Stir often.
Take mixture off the stove. Toss in mallows Stir well; and then add vanilla-flavored milk chips. Beat ’til mixture becomes smooth. Pour evenly into baking pan (greased, 8 inches).
Let it cool; then cut it into bars.

Vanilla Nut Fudge Recipe
Ingredients:
1 box of vanilla (regular, 3 3/4 ozs)
Non-instant pudding mix
1/2 c of milk (evaporated)
1 c of sugar (granulated)
1 Tbsp of butter (or margarine)
1/2 c of walnuts; chopped coarsely
Instructions:
In a heavy saucepan, mix milk, butter, sugar, nuts and pudding mix. Blend well ’til smooth. Let is boil over moderately high heat, stirring often. Reduce heat (to medium-low). Stir for 3 more minutes.
Take mixture out of the heat. Beat ’til thick, as wells as smooth (or ’til it loses its gloss). Spread evenly onto a baking pan (greased, 8 inches). Chill ’til it sets. Cut it into bars.

French Silk Fudge Recipe
Ingredients:
2 c of sugar (super fine)
1/2 c or 1 stick of butter
1 can of milk (evaporated) (5 oz)
2 c of marshmallows (mini)
2 bags or 3 1/2 c of milk choco chips
2 Tbsps of pure vanilla (extract)
1 c of pecans; chopped
Instructions:
Prepare a (baking) pan (8 by 11) lined w/ butter; put on one side.
Using a bowl (2 quart) mix milk and sugar. Set microwave (high setting) and cook mixture for three minutes, then immediately remove mixture and blend.
Place in microwave again, making sure that mixture does not boil over. Divide butter four times and put on one side.
Take out mixture in microwave, then add mini marshmallows and butter, stir ’til it melts. Blend the vanilla, nuts, plus chips then,mix thoroughly.
Even out in the pan lined w/ butter; afterwards let it chill (1 hour).
Slice into desired sizes (or 1 inch square); keep mixture inside a container w/ cover and refrigerate. Yields approximately 80 candies.

Cherry Vanilla Fudge Recipe
Ingredients:
3 c of sugar (granulated)
1/2 tsp of salt
1/2 c of milk
1 c of cream (light)
1/4 c of syrup (light corn)
2 Tbsps of butter/margarine
2 tsps of extract (vanilla)
1 c of candied red cherries; divided into four
Instructions:
Mix first 6 ingredients of the recipe a big saucepan. Simmer in moderate heat, whisking it regularly, ’till mixture boils.
When boiling, go on to cook, whisking it only from time to time. Wait ’till mixture turns into a soft ball (238 degrees Fahrenheit using a thermometer).
Take the mixture out from the heat and let it cool (100 degrees F). Once cool, mix in extract and beat quickly so that mixture becomes thick and it will lose gloss.
Finally, add in quartered cherries. Place in pan(square) lined with butter and let it cool; cutting into square shapes.
This recipe makes 16 pieces of yummy fudge.

Vanilla Wafer Fudge Recipe
Ingredients:
6 oz of choco chips (semisweet)
3 oz of cream cheese
2 c of wafer (vanilla); crushed
1/4 c of powdered sugar; sifted
1/4 c of honey (pure)

1/2 c of nuts; chopped
1/8 tsp of salt
Instructions:
Melt cream cheese and choco chips in a bain-marie; once melted, take out from the heat then add powdered sugar, vanilla, salt, honey, and crushed wafers. Incorporate well and fold in the nuts.
Scoop a spoonful of the mixture and mold into small balls then roll onto (finely chopped) nuts. Refrigerate till firm.
Note: If you don’t like to form fudge into balls, press the mixture onto a greased 8 inch square baking pan. Refrigerate till firm then cut to bars.

Ingredients:
2 c of sugar (dark brown)
1 c of sugar (granulated)
1 c of milk (evaporated)
1/2 c of butter (or margarine)

1 pkg butterscotch chips (Nestle, 6 ozs)
1 pkg choco chips (semi-sweet)
1 c of walnuts (black); chopped coarsely

Instructions:
Mix milk, butter and sugars in a saucepan. Let it boil (over medium heat). Stir often. Let it simmer again for about 15 more minutes, stirring every now and then.
Take it out of the heat. Toss in Marshmallow Creme, butterscotch and semi-sweet choco chips. Afterward, stir ’til the chips melt and the mixture becomes smooth.
Add in the walnuts plus vanilla. Incorporate well. Pour mixture into square baking pan (9 inches). Chill and cut into bars.

Ingredients:
3 c of sugar (granulated)
3/4 c of butter
1 can of milk (evaporated, 5 ozs)
12 ozs of chocolate pcs (semi-sweet)
30 pcs of caramels; each cut into four
1 jar of Marshmallow Creme (7 ozs)
1 c of pecans; each cut into two
1 tsp of vanilla
Instructions:
Using a saucepan (heavy, 2-3 qts), mix butter, milk and sugar. Let it boil (about 5 minutes), ’til thermometer (for candy) goes up to 234 degrees F. Stir constantly.
Take it out of the heat; then put in the semi-sweet choco pieces. Stir ’til it melts. Add the rest of the ingredients. Beat ’til well combined. Pour mixture into pan (greased, 9 x 13 inches).
Let it cool; and then cut it into bars.

Ingredients:
2 c of sugar (granulated)
1 c of sugar (brown)
8-1/2 oz of pineapple (crushed, include the juice)
1/2 c of milk
1 Tbsp of corn syrup (light)

24 pcs of marshmallows (large)
1 tsp of vanilla
1 c of nuts; chopped
Instructions:
Combine the sugars, syrup, butter, pineapple with juice, and milk; cook (238 degrees F) on a sugar thermometer while stirring constantly. Take out from the heat and add vanilla and marshmallows.
Stir until marshmallows melt. Beat the mixture to make it creamy then fold in nuts. Transfer onto a greased 8 inch square baking pan. Let it cool.

Ingredients:
2/3 c of evaporated filled milk
2-1/2 c of sugar (granulated)
3/4 c of peach puree

Instructions:
Grease a 9 inch square metal pan; line with aluminum foil.

Ingredients:
3/4 c of Velveeta®; cubed/shredded or cheese (Cheddar); grated
1/4 lb of butter/margarine
1/4 c of cocoa; powdered
1 tsp of vanilla
3 c of confectioners sugar
Instructions:
Melt Cheddar cheese & butter; take it out from the burner and beat in sugar, extract & powdered cocoa. Form into round shapes, mold, and push into pan lined with butter.
Add nuts if desired. Avoid placing in the refrigerator.

Sugarless Chocolate Fudge Recipe
Ingredients:
16 oz of softened cream cheese
2 squares of chocolate (1 oz, unsweetened); melted, cooled
1/2 c of pecans; chopped
24 packs of sweetener (or half a cup of sugar)
1 tsp vanilla flavoring or extract
Instructions:
Beat the chocolate, cheese, vanilla and sweetener until it reaches a smooth consistency. Add the pecans. Mix well.
Pour slowly to an 8 inch tin pan that’s been pre-lined with aluminum foil. Put a cover on and place in the refrigerator for around 24 hours.

Ingredients:
1-2/3 c of sugar (granulated)

Ingredients:
2 c of sugar (light brown)
1 c of plain yogurt
1/8 tsp of salt
2 Tbsps of butter (unsalted)
1 c of marshmallows (miniature)

1-1/3 c of sugar (granulated)
7 oz of Marshmallow Creme

Black Forest Fudge Recipe
Ingredients:
6 oz of chocolate (bittersweet/semisweet); chopped
1/2 c of Marshmallow Creme
1/3 c of whipped cream
1 oz of chocolate (unsweetened); chopped
1 tsp of extract (vanilla)
1 and 1/4 c of sugar (granulated)
2/3 c of tart cherries (3 oz); dried
1/2 c of milk (sweetened and condensed)
1/2 c of preserves (cherry)
1/4 c of choco chips (semisweet)
1/3 c of water
1/4 c or 1/2 stick of butter; unsalted
Instructions:
Prepare a pan (9 by 5 by 3 inches) and line w/ foil. Mix bittersweet/semisweet chocolate, Marshmallow creme, unsweetened chocolate, and vanilla extract in a mixing bowl.
In a separate saucepan, blend milk, preserves (cherry), cream, 1/3 c of water & a half stick of butter; cook over moderate-low level heat ’til butter softens & sugar dissipates then, place in dried tart cherries.
Bring heat up to a moderate-high level and let the mixture boil (230 degrees Fahrenheit using a thermometer clipped to pan’s side) whisking it regularly but gradually and tipping the pan to immerse thermometer’s bulb for approximately 17 mins.
Quickly place the fudge over the mixture of chocolate in a big bowl, and with the use of a spoon (wooden), whisk the mixture briskly ’til chocolate liquefies and mixture becomes sticky, but glossy.
Do this for 3 mins., then, move the mixture to the foil-lined pan and even out the surface. Dust with choco chips and refrigerate ’til it becomes firm (that is exactly 3 hrs.).
Remove the mixture from the pan holding the foil’s edges. Clip the ends of the fudge and slice it into 2 dozens of square fudge. Let it stand for a good half hour prior to serving it.
